How to Make a Refreshing Baked Potato Salad

Ingredients:
Russet baking potatoes: 4 to 6 large
Sour cream 1 cup reserved: 2 cups
Mayonnaise: 1 cup
Green onions chopped: 1 bunch
Real bacon bits or 6 slices bacon cooked and crumbled: 1 cup
Shredded cheddar cheese: 1 1/2 cups
Chopped black olives: 1/2 cup

    Wash the potatoes

    First of all, make sure that you have washed the potatoes completely and allow them to dry for some time.

    Coat the potatoes with oil and salt

    Once the potatoes are completely dry, coat them with vegetable oil and salt. You can apply the oil using a brush.

    Heat potatoes in an oven

    Wrap the potatoes in an aluminium foil and place them in a preheated oven. Bake them for about 45 minutes until they get really soft. There is another way of performing this task, if you don’t have an oven.

    You can boil the potatoes in a pan filled with water. In this way, they will get tender from inside and can be easily peeled.

    Remove the potato skin and mash them

    Once the potatoes cool down completely, peel their skin. You can perform this task using your hands, but the better option would be to do it with a peeler. Now, mash them after their skin is removed and make the other mixture.

    Beat sour cream and mayonnaise in a bowl

    Take a large bowl, add sour cream and mayonnaise to it and beat them until they settle in nicely.

    Add olives, green onion and cheese

    You can now add the olives, chopped green onion and cheese to the mixture and beat them for a few seconds until they form a thick mixture.

    Add the mashed potatoes to the bowl

    You can now add the mashed potatoes to the bowl and mix them to get your desired potato salad. As per your taste, you can add some spices and salt to the mixture, as that will make it even more appetizing.
