Instructions

  • 1

Warm a large pot over the stove top on medium-high heat and pour one tablespoon of olive oil into it.

  • 2

Add chopped onions, green peppers, celery and mushrooms and sauté over medium high heat for 8 to 10 minutes, stirring occasionally.

  • 3

Once the vegetables are soft, add chopped garlic and toss it to combine properly.

  • 4

Also add seasonings, parsley, oregano, salt and pepper to the vegetables, stir thoroughly and allow to cook for another five minutes, stirring often. If you feel vegetables have become too dry, add one to two tablespoons of water.

  • 5

Add two tablespoons of tomato paste to the vegetables, stir thoroughly and allow to cook for 2 to 3 minutes.

  • 6

Also add canned and fresh tomatoes to the pot and let them boil for 5 to 10 minutes with the cover on.

  • 7

Add Worcester sauce, steak sauce and water to the vegetables and return to boil.

  • 8

Once the mixture starts boiling, reduce the heat to low and allow the sauce to simmer uncovered for a couple of hours, stirring occasionally.

  • 9

Remove the cooked vegetables from heat and allow them to cool to lukewarm.

  • 10

Once the vegetables are cool enough to handle, blend them in batches using a blender or a food processor.
