How to Make a Vegan Cheeseburger

Besides being superb in taste, this vegan cheeseburger recipe is easier than you think. It is powerhouse of whole grains, beans, fiber-rich vegetables, and other flavorful ingredients.

Ingredients:
Brown rice: ½ cup
Onion (finely diced): 1
Red beets (finely diced): 1 pound
Cloves garlic (nicely minced): 3 to 4
Cider vinegar: 2 tablespoons
Black beans (drained and rinsed): 1 can
Lemon Juice: 2 teaspoons
Extra-virgin olive oil: 1 tablespoon
Parsley (properly minced): 2 tablespoons
Ground coriander: 1 teaspoon
Thyme: ½ teaspoon
All-purpose flour: 2 tablespoons
Salt and pepper: 2 to 3 pinches
Cheese (thinly slices): 1 handful

Instructions

    Bring a large pot of water to boil and add half cup of brown rice. Reduce the heat to medium-low range and let the rice simmer for about 35 to 40 minutes or until tender.

    Use a colander to drain the cooked rice and set aside to cool.

    In the meantime, pour one teaspoon of extra virgin olive oil into a skillet and set on stove, setting the heat range to medium level.

    Once the oil is finely warm, add in one finely chopped onion and stir fry until lightly brown and softened. Sit in the finely diced red beets. Now cover the skillet and let the beet slices fry until completely softened, stirring occasionally.

    Add in 3 to 4 minced garlic cloves and cook it for 30 to 40 seconds or until the mixture is fragrant.

    Drizzle 2 tablespoons of cider vinegar over the beet mixture and mix it well the fried ingredients.

    Take away the skillet from heat and set on your kitchen’s counter-top.

    Place the drained and rinsed black beans in a large mixing bowl and mash them a bit, using the back side of the ladle or spoon.

    Add in the rinsed brown rice and warm beet mixture.

    Drizzle the freshly squeezed lemon juice, remaining extra virgin olive oil and all the spices over the mixture and merge them well.

    Sprinkle some salt and black pepper over the mixture to taste.

    Once the mixture tastes like the way you like, stir in 2 tablespoon of all-purpose flour. Place it aside to marinate.

    Meanwhile, heat up a large skillet and pour 2 tablespoons of extra virgin olive oil into its centre. Use a large spoon to spread the warm oil until the base of the skillet is coated well. Let the oil simmer.

    Scoop up the burger mixture and shape it into six patties, using your palms.

    Place the patties in the skillet and increase the stove’s heat to medium-high. Fry the patties for 2 to 3 minutes on each side or until crusty, flipping them occasionally.

    Remove the fried and nicely browned patties from oil and place on a plate, lined with kitchen towel. Leave it for 3 minutes until the towel absorbs the oil well.

    Cut the 6 fresh and soft burger buns into halves and garish them with some fresh greens.

    Lay some cheese slices over the greens and top with patties.

    Your Vegan Cheeseburgers are ready; serve warm and enjoy.
