How to Make an Easy No Bake Key Lime Pie

Key lime pie is an American dessert which gets its name from small Key limes, that are widely grown throughout the Florida Keys, where it is the official dessert. This delicious lime-flavoured dessert is one of the simplest pies around the world, since it does not require any baking or cooking. It is traditionally made from key lime juice, whisked together with condensed milk and egg yolks. The whipped mixture is spooned into a pie crust and chilled in the freezer before serving. The recipe uses condensed milk instead of fresh milk because when the pie was initially created, Key West was an isolated area and fresh milk was not easily available.

Ingredients:
– Graham cracker crumbs
– Butter (melted): 2 tbsp
– Cream cheese (softened): 8 1/2 oz
– Key lime juice: 7 1/2 oz
– Sweetened condensed milk: 14 oz
– Freshly grated lime zest: 1 tsp

    Put cracker crumbs in a large mixing bowl and sift them gently with a fork.

    Put two tablespoons of butter in a microwave safe bowl and heat for 30 to 40 seconds to melt it.

    Pour the melted butter into the bowl containing crumbs, mix thoroughly and transfer to a 9-inch pie shell.

    Press down the crumbs onto the base and sides of the pie shell with your hands and set aside.

    Pour 8 ½ ounces of softened cream cheese into a medium sized mixing bowl and blend it with an electric mixer until you can move it easily with a plastic spatula.

    Now add condensed milk to the bowl and blend again until it is completely combined with the cream cheese.

    Pour 7 ½ ounces of key lime juice into the bowl and blend only until it s combined with whipped cream and milk (about 2 to 3 minutes). Do not blend the cream mixture and lime to bubbles, otherwise it would not set in the pie crust. Also add lime zest to the bowl and mix with a spoon.

    Pour this mixture into the prepared pie shell and refrigerate for a couple of hours before serving.
