This cake might not seem or sound as fancy as those you see in the bakeries around you but is surely as tasty as any cake could be. It is your everyday cake. It is your special cake. It can be taken as a delight with tea and coffee and also served in the dessert section.
Ingredients
- Apples: 2
- Lemon juice: 2 tbs
- Ground cinnamon: 2 tsp
- Caster sugar: 250g
- Unsalted butter: 250g
- Self-raising flour: 1⅔ cup (250g)
- Eggs: 4
- Icing sugar, to dust
Instructions
- Preheat your oven to 180 degrees. After that, grease a baking pan well. The ingredients are enough to fit a pan of 23 cm in diameter.
- Make the topping of the cake first. Peel, core and slice the apples. Add them to a bowl with fresh lemon juice. Pour in half the cinnamon and set it aside for use in later parts of the recipe.
- In a bowl, combine 50 g each of the sugar, flour, the remaining cinnamon and the butter. Mix these ingredients together using your fingers. Make sure that your hands are washed well before this step.
- Take out the electric beater and beat the four eggs and the 200 g of sugar left together. Take out the mixture in a bowl. Warm the remaining butter in a pan.
- Pour it in the egg mixture and combine well. Now add in the remaining flour and sift it in. Combine it all well. Pour this into the greased pan that you prepared earlier.
- Add the apple slices to the top of the mixture in the pan. Scatter the crumbled mixture you prepared in step 3 over it all. Place it in the oven and bake for an hour. Cool it for ten minutes before serving.
