Avocados are considered among the most powerful of all vegetables. They are a good source of minerals, fibre, folate and vitamin C. For those looking forward to gain weight, avocado is a super fruit that offers around 300 calories. Yes, this small fruit contains 300 calories, and you can imagine how much a dozen might have. In addition, avocados come with 15 grams of heart healthy unsaturated fats.
Ingredients
- English cucumber - 1
- Avocado - 1
- Green onions - 2-
- Fresh mint - ¼ cup
- Buttermilk - ½ cup
- Water - 1 ½ cups
Instructions
- Dice one third of the cucumber.
- The remaining two third of the cucumber should be chopped evenly.
- Please note that you do not have to peel the cucumber. You will be consuming it with the peel.
- Blend the chopped cucumber pieces in a blender.
- Leave the diced pieces as they will be needed to garnish.
- Now, chop the remaining ingredients and get them ready for blending.
- Make sure you are cutting the avocados into halves first.
- Next step is to blend the chopped avocados with the cucumber blend.
- You will have to blend the mixture for at least two minutes to make sure it gets a smooth texture.
- Now, add ½ cup of buttermilk or yogurt to the mixture.
- Again, blend it for a minute to ensure the milk has become a part of your smooth mixture.
- Add water and blend it again for one last time.
- By this time, the entire mixture should be smooth and light green in colour.
- Your cold avocado soup is ready.
- Now, allow the soup to be refrigerated for an hour or so before serving.
- Use the diced cucumber pieces for garnishing.
- For added taste, you can use mint for garnishing.
