One of the best ways of making boneless chicken breasts is to wrap them in bacon strips. Bacon wrapped chicken is a super delicious recipe in which chicken fillets are stuffed with a creamy filling and then wrapped in a bacon slice. This combination is then baked with gravy for about an hour.
Ingredients
- Skinless, boneless chicken breast halves - 4
- Cream cheese (sliced) - ½ (8 ounce) package
- Bacon - 4 slices
- Chopped fresh chives - 1 tsp
- Condensed cream of chicken soup - 1 (10.75 ounce) can
- Mayonnaise - ½ cup
- Milk - ½ cup
- Lemon juice - 1 tsp
- Ground black pepper - ¼ tsp
- Salt - 1 pinch
Instructions
- Preheat the oven to 325 degrees Fahrenheit (165 degrees Celsius).
- If using frozen chicken breasts, thaw them properly before proceeding.
- Take a chicken breast and place it on a clean, firm surface.
- Cover the breast piece with a plastic wrap and pound it using a meat-pounding mallet.
- Now take a bacon strip and place it over a flat preparation surface.
- Drop a pounded chicken breast on the top of the bacon slice.
- Put a slice of cream cheese and some chopped chives in the middle of the chicken breast.
- Roll the chicken and bacon into a ball and insert a toothpick in the middle of the ball to hold it together.
- Similarly wrap remaining three chicken breast fillets as well.
- Set the bacon wrapped chicken breasts in a 9x13 inch baking dish, but do not squish them together since the dish will be filled with sauce.
- To make the sauce, combine condensed cream of chicken soup, milk, mayonnaise and lemon juice in a medium sized mixing bowl. Season the sauce with salt and pepper and mix thoroughly until smooth.
- Pour the sauce over the wrapped chicken balls and bake in the preheated oven for an hour.
