The Beet Soup is one among the very flavorful and popular Russian recipes. This vibrant Beet Soup is not only mouth-watering but healthful as well. Beet, main ingredient of the soup, is a rich source of Vitamin C, iron, minerals, including magnesium, phosphorous, folic acid, and B6. It is your liver’s friend and decreases the unfortunate chances of strokes & heart attacks.
Ingredients
  • Olive oil – ¼ cup
  • Onion - 1 ½
  • Garlic – 4 ½ cloves
  • Beets – 9
  • Beef – 3 cups
  • Salt
  • Pepper
  • Heavy cream
Instructions
  1. Set a large saucepan over medium heat of stove and pour ¼ cup of olive oil into it. Wait until the oil warms properly.
  2. Now add in the finely chopped onion and cloves garlic slices. Stir fry the onion-garlic mixture for about 3 to 5 minutes or until tender but not browned in color.
  3. Stir in the peeled beet slices and cook the mixture for one more minute.
  4. Once the beet slices are lightly soft, add in 3 cups of beef stock and let the mixture simmer for about 25 to 30 minutes or until all the ingredients are soft.
  5. Make sure to half cover the saucepan during simmering.
  6. Take away the beet mixture from heat and set aside until slightly warm to handle.
  7. Pour the beet mixture in an electric food processor or blender and seal it completely. Blend it until the mixture is unified and smooth.
  8. Pour the mixture back into the saucepan and bring it to boil again, using medium-low heat range.
  9. Remove the soup from heat ladle it into six small soup bowls.
  10. Garnish the soup with a long swirl of cream on the top. Otherwise, place a small dollop of whipped cream right into the center of the soups.
  11. Dust the Beet Soups with some ground black pepper and serve warm!
