Instructions

  • 1

    Set the oven to boil

The first step towards making black bean chili is to set the oven to boil. You need to grab a cookie sheet and put the tomatoes on it before you broil them in the oven. Keep them in the oven until the tomatoes become soft and black spots appear on them.

  • 2

    Chop the tomatoes

Having taken the tomatoes out of the oven, you need to allow them to cool down for a few minutes. Once they are not as hot, put the tomatoes in a food processor and just roughly chop them. You can also use a knife and board to chop the tomatoes; however, a food processor is highly recommended by experts.

  • 3

    Saute the onions and pork

You are now required to grab a large pot and put onions and pork in it before you sauté them in the oil over medium heat. Keep doing that until the pork is golden brown.

  • 4

    Add the garlic and jalapeno

At this moment, you can add jalapeno and garlic in the pot and cook it for another couple of minutes.

  • 5

    Add other ingredients

Put dry spices in the pot now and cook it for one minute. You can now add the bay leaf, chopped tomatoes, ham hock, entire can of Ro-Tel tomatoes, beans, tomato sauce, water, rum, salt and pepper.

  • 6

    Cook again

You should now allow the recipe to cook for another two hours over medium heat. However, you need to make sure that the pot is appropriately covered before you start cooking it.

  • 7

    Uncover the pot

You can now remove the ham hock and bay leaf after uncovering the pot. You should thoroughly check the seasoning and consistency. You may adjust the seasoning according to your own taste.
