Blueberry banana muffins are a perfect blend of blueberries, milk, wheat flour, eggs, mashed bananas and vanilla extract. It is not very difficult to make as compared to other muffins. All you need is a little time and few ingredients.
Ingredients
- Whole wheat flour: 2 cups
- Brown sugar: ⅓ cup
- Ground cinnamon: ½ teaspoon
- Baking powder: 2 teaspoons
- Baking soda: 1 teaspoon
- Mashed bananas: 1½ cups
- Egg whites: 4
- Vanilla extract: 1 teaspoon
- Fresh blueberries: 1 cup
Instructions
- First of all, you have to preheat your oven to 350 degrees Fahrenheit (or 175 degrees Centigrade).
- Then, take a muffin pan and grease it with some oil or butter.
- After that, take a large bowl and put wheat flour, baking powder, cinnamon, brown sugar and baking soda into it.
- Mash the bananas and add them to the bowl. Then, pour some vanilla extract and egg whites.
- Mix all the ingredients well with each other. You have to mix them until the bananas and flour mixture becomes smooth.
- After mixing all the ingredients, you have to fold in the blueberries. You don’t have to put too many blueberries into the mixture.
- Take a spoon and batter the mixture into the greased muffin pan. Fill all the places completely and then put the pan in the oven.
- Bake the mixture for around 15 minutes in the oven. You have to bake it until it become brown. You can check whether it is baked or not by inserting a toothpick into a muffin. If the toothpick comes out clean, it means muffins are ready. But, if the toothpick doesn’t come out clean, it means you have to wait a little.
