Ingredients

– 2 tablespoons olive oil
– 1 large onion, chopped
– 3 tablespoons ground cumin
– 3 tablespoons minced garlic cloves
– 2 lbs lean ground beef
– 1 -2 tablespoon chilli powder
– red pepper flakes
– 1 1/2 teaspoons kosher salt
– 2 cups low sodium beef broth
– 1/4 cup tomato paste
– 2 (10 1/2 ounce) cans condensed tomato soup
– 8 flour tortillas, 10-inch
– 14 1/2 ounces refried beans
– 1 1/2 cups salsa (whatever heat degree you want)
– 1 cup cheddar cheese, shredded
– 8 ounces sour cream
– 2 cups Mexican blend cheese, shredded

Instructions

  • 1

Preheat the oven to 350 degrees. Heat olive oil in a skillet. Add the onions in the pan and fry for around five minutes. Add garlic and ground cumin and fry for five minutes, before adding ground beef and cook for another 10 minutes, until the meat turns brown.

  • 2

Add chilli powder and salt and continue stirring. Add beef broth and tomato paste and wait for the mixture to start simmering. Cook for around 20 minutes, without covering the pan. Make sure almost all the liquid is evaporated and you only have dark paste left.

  • 3

Take a measuring cup and fill it with 1/3 water. Add 1 can of tomato soup in it and mix well. Take a 9" x 13" baking dish and pour the mixture in it, evenly distributed. Make another mixture of tomato and water and set aside.

  • 4

Now, place tortilla on your working surface. Take ¼ cups of refried beans and spread them over the lower 1/3 of the tortilla.  Pile the 1/8 beef mixture over the beans. Pour 2 spoons of salsa over the beef, before pouring 2 spoons of sour cream.

  • 5

Take 1/8 of cheddar cheese and use it as finishing ingredient. Now, roll the bottom of the tortilla, before folding the sides. Make sure all the sides are well folded under the roll.

  • 6

Sprinkle the Mexican cheese over the burritos and put them in the oven and bake for around 30 minutes.

  • 7

    Take them out and serve.
