Take advantage of the apple season and incorporate fresh and crunchy apples into a perfect caramel apple salad. Kids and adults of all ages will fall in love with the rich, creamy, crunchy, and flavourful texture of this refreshing salad. Not only is it a family favourite, but this healthy recipe is also a wonderful source of sodium, protein, fibre and carbohydrates.
Ingredients
  • Cold fat-free milk - 1 cup
  • Sugar-free instant butterscotch pudding mix - 1 package (about 1 ounce)
  • Reduced-fat whipped topping - 2 cups (divided)
  • Fresh apples (finely chopped) - 3 ½ cups
  • Salted peanuts (finely chopped) - ½ cup
Instructions
  1. In a large glass mixing bowl, beat one cup of cold fat-free milk and one ounce of sugar-free instant butterscotch pudding mix until it forms a thick but downy mixture.
  2. Add in one cup of reduced-fat whipped topping and use a whisk to thoroughly blend all ingredients.
  3. Then, whisk in the remaining one cup of the whipped topping, and top the entire mixture with 3 ½ cups of chopped apples.
  4. Set the whisk aside and use a large spoon to properly coat the apple slices with the creamy mixture.
  5. Cover the mixing bowl, using a flat plate or some plastic wrap.
  6. Now, refrigerate this apple mixture until it settles and chills.
  7. Remove the mixing bowl from the refrigerator, unseal it, and equally divide the creamy apple mixture among six salad bowls.
  8. Sprinkle the salad servings with chopped salted peanuts and serve with spoons. Enjoy!
