Take advantage of the apple season and incorporate fresh and crunchy apples into a perfect caramel apple salad. Kids and adults of all ages will fall in love with the rich, creamy, crunchy, and flavourful texture of this refreshing salad. Not only is it a family favourite, but this healthy recipe is also a wonderful source of sodium, protein, fibre and carbohydrates.
Ingredients
- Cold fat-free milk - 1 cup
- Sugar-free instant butterscotch pudding mix - 1 package (about 1 ounce)
- Reduced-fat whipped topping - 2 cups (divided)
- Fresh apples (finely chopped) - 3 ½ cups
- Salted peanuts (finely chopped) - ½ cup
Instructions
- In a large glass mixing bowl, beat one cup of cold fat-free milk and one ounce of sugar-free instant butterscotch pudding mix until it forms a thick but downy mixture.
- Add in one cup of reduced-fat whipped topping and use a whisk to thoroughly blend all ingredients.
- Then, whisk in the remaining one cup of the whipped topping, and top the entire mixture with 3 ½ cups of chopped apples.
- Set the whisk aside and use a large spoon to properly coat the apple slices with the creamy mixture.
- Cover the mixing bowl, using a flat plate or some plastic wrap.
- Now, refrigerate this apple mixture until it settles and chills.
- Remove the mixing bowl from the refrigerator, unseal it, and equally divide the creamy apple mixture among six salad bowls.
- Sprinkle the salad servings with chopped salted peanuts and serve with spoons. Enjoy!
