You do not need a reason to eat a cookie. When it is a chocolate chip cookie we are talking about, it can be eaten as a dessert, comfort food, snack or just because they are so tasty. The tartness of cherries and the sweetness of chocolate chips is the perfect sweet and sour combination.
Ingredients
  • All purpose flour: 1½ cups
  • Baking soda: ½ teaspoon
  • Coarse kosher salt: ¼ teaspoon
  • Vanilla bean: 1
  • Dried cherries: 1 cup (6 ounces)
  • Unsalted butter, room temperature: 8 tablespoons (1 stick)
  • Sugar: ½ cup
  • Packed light brown sugar: ½ cup
  • Egg: 1 large
  • White chocolate chips: ½ cup (3 ounces)
  • Semisweet chocolate chips: ½ cup (3 ounces)
Instructions
  1. Preheat the oven to 350 degrees and place one rack on the lower third of the oven and the other on the upper third. Prepare the baking sheets by lining them with parchment paper.
  2. In a mixing bowl, combine flour, salt and baking soda. Scrape the seeds from the vanilla pod and put them aside. In another bowl, combine the vanilla pod, dried cherries and 1 cup of boiling water. Let this mixture stand for five minutes. Take the water and the pod out and keep the cherries.
  3. In the stand mixer, combine sugar, butter, brown sugar and white sugar at a medium speed. It will take around 2 minutes to become fluffy.
  4. Add the vanilla seeds and the eggs and beat for one minute. Set the mixture on low and add the flour in three portions and beat till they mix. At this point, add the cherries and the chocolate chips.
  5. Take a tablespoon and drop dough, leaving a space of two inches in between on the baking sheet. Bake the cookies for 12 minutes and switch the racks at half time.
  6. The biscuits should be golden brown in colour. Let them cool on the baking sheet for five minutes and then put them on the wire rack. Store them in a jar once cooled completely.
