Chocolate covered amaretto cherries are very delicious and have been considered as one of the best party foods. These are very easy to make as compared to other items which are prepared with chocolate. Although, they can be prepared within 1 hour and 15 minutes, however, you have to keep them in the refrigerator for around 1 to 2 weeks so that they become consumable.
Ingredients
  • Amaretto
  • Maraschino cherries: 60
  • Butter: 3 tbsp
  • Light corn syrup: 3 tbsp
  • Confectioners' sugar: 2 cups
  • Cookie sheet
  • Dipping chocolate: 1 lb
Instructions
  1. First of all, you have to drain the cherries thoroughly. But, reserve around ¼ cup of the cherry juice and put it in a saucepan to boil.
  2. Now, remove the pan from the stove and stir the fluid in half a cup of amaretto.
  3. Then, stir the cherries and let them stand for a night. After that, place the cherries on paper towels and keep them there for around 3 to 4 hours (until they are completely drained).
  4. Put the butter in the small microwave bowl and microwave it for around 30 seconds so that it becomes soft. Then, pour the butter in the medium-sized mixing bowl.
  5. Mix the butter well after adding corn syrup into it. Afterwards, add some confectioners’ sugar and mix it well until the mixture become smooth.
  6. Now, line the cookie sheet with the wax paper and shape half of the sugar dough around the maraschino cherries. Put the covered cherries on the baking sheet and chill them in the refrigerator for around one to two hours.
  7. Melt the chocolate in the pan and dip each cherry in it by holding it from its stem. You can take help of a spoon to coat it with the chocolate completely.
  8. You have to make sure that whole cherries are coated well with chocolate, otherwise the cherry juice will come out of it.
  9. Place the coated cherries in the refrigerator after storing them in a container. Keep them there for 1 to 2 weeks and allow the centre to liquefy and soften.
