Ingredients
  • Cookies:
  • Butter, softened: ½ cup
  • Sugar: 1 cup
  • Egg: 1
  • Salt: ¼ tsp
  • Baking soda: ¼ tsp
  • Rum extract: 1 tsp
  • Flour: 1½ cups
  • Cocoa powder: ⅓ cup
  • Baking powder: ¼ tsp
  • Maraschino cherries, drained and patted dry with paper towels: 30
  • Sugar, for coating: 2 tbsp
  • Glaze:
  • Confectioners' sugar: 1 cup
  • Maraschino cherry juice: 4 tsp
  • Rum extract: 1 tsp
Instructions
  1. Preheat the oven to 350 degrees.
  2. Take butter, egg, sugar and rum extract and beat them well in a large bowl. Use whisker for this purpose. Make sure you create a fluffy mixture.
  3. Mix together salt, cocoa, flour, baking soda and baking powder. Gradually add the newly made mixture into the previously made mixture, while stirring.
  4. Now, take one spoonful of the dough that you have created and place it over a plain surface. Place a cherry over the top of the dough and roll it over. Roll the cherry cookie into sugar. Repeat the process for each cherry ball.
  5. Now, place the cookies on the baking sheet and make sure you keep 2-inch distance between them.
  6. Place the cookies into the oven and bake them for 8 to 10 minutes.
  7. Now, you need to create the glaze. For that purpose, mix together rum extract, maraschino cherry juice and confectioners' sugar. Make the mixture fluffy, before pouring it over all the cookies.
