Ingredients:
Cans black-eyed peas: 2 (15.5 ounce)
Tomato, chopped: 1 large
Red bell pepper, chopped: 1 medium
Green bell pepper, chopped: 1 medium
Red onion, diced: 1/2
Stalk celery, chopped: 1
chopped, fresh parsley: 1 tablespoon
Balsamic vinegar: 3 tablespoons
Olive oil: 2 tablespoons
Salt and pepper: To taste

Prepare the vegetables. Chop up the tomato, pepper, celery and parsley finely. Dice the onions. Mix in the tomato, onion, parsley, celery, peppers and peas in a large mixing bowl.

Take a small mixing bowl and pour in the vinegar and the olive oil. Season it according to taste with salt and pepper. It will be great if you use freshly ground black pepper. Pour this dressing over the vegetables in the mixing bowl and toss well to coat. Cover it with a cling film and place it in the refrigerator for eight hours.

Take out the chilled salad and place it in a platter or bowl. Sprinkle some chopped parsley or pepper over it and serve.
