How to Make Creamy Basil and Red Pepper Pasta

The name is enough to let you know the richness of this dish. The addition of basil and red pepper along with other ingredients to your pasta makes it a delicious affair that your family is going to truly enjoy. This is a special edition meal and you can make it on celebrations and on weekend nights when you feel like treating loved ones around you. The recipe for the dish is a really easy one but will become the most sought after one if your friends and neighbours get their hands on the pasta you made. The best thing is that it gets prepared in less than half an hour. So even if you have just thirty minutes left before the guests arrive and feel like expanding the menu, here is a solution. The ingredients used are also commonly available around the house.

Utensils: Cooking pot, skillet, blender, mixing bowl, spoon and serving platter.

Ingredients:
Penne pasta, uncooked: 2 cups
Roasted red peppers, well drained: 1 jar (7 oz.)
Free Cream Cheese, softened: 4 oz (1/2 of 8-oz. pkg.)
Fresh basil: 1/2 cup
Fat-free milk: 1/4 cup
Grated Parmesan Cheese: 2 tbsp
Boneless skinless chicken breasts, cut into bite-size pieces: 1 lb

    Fill the cooking pot with water to a level where it is double the volume of the pasta. Add a pinch of salt and bring to a boil. Add the pasta to this water and boil for 7-8 minutes or until the pasta is cooked but still firm to touch. Remove pasta from the heat and drain into a colander placed under the kitchen sink. Rinse in cold water. The cool water will help keep the grains keep separate. Instructions on the pasta packet are also going to help you.

    Take out the blender and pour in everything else except the chicken. It will become a puree. Now that you have made the pepper puree, move on to the chicken. Place the chicken in the skillet and cook it with cooking spray. Cook it until there is a colour change overall and the pink of the chicken has disappeared.

    Now add the pepper puree to the skillet and stir in well. Let the chicken absorb the puree for around five minutes.

    Now add in the pasta and stir in carefully using a wooden spoon. The pasta is ready. Take it out on a serving platter and garnish with a few sprinklings of Parmesan cheese.
