Ideal if you are looking for a quick, nutritious, and delicious meal, these chicken roll-ups are stuffed with melted Swiss cheese and lined with smoky slices of ham. The preparation takes longer than the actual cooking, because this version of Romano chicken is finished off in the microwave. Serve with a fresh green salad and garlic bread for a tasty and wholesome meal.
Ingredients
  • Boneless skinless chicken breasts, pounded to about ¼-inch thick - 4
  • Swiss cheese (thinly sliced) - 4 slices
  • Slices ham (thinly sliced) - 4
  • Grated Parmesan cheese - 3 -4 tablespoons
  • Paprika - 1½ teaspoons
  • Garlic powder - ½ teaspoon
  • Dried tarragon - ½ teaspoon
  • Dried basil - ½ teaspoon
  • Melted butter - 1 -2 tablespoon
  • Dry breadcrumbs - ⅓ cup
Instructions
  1. To begin, you will need to prepare your pan. Use a microwave-safe dish for this purpose, and make sure it is large enough to hold four rolled-up chicken breasts.
  2. Butter or grease the dish, to ensure that the Romano chicken does not stick to the pan when cooking.
  3. Next, start preparing your chicken. Spread your boneless, skinless, pounded chicken breasts out onto a flat surface, and season them with an ample amount of salt and pepper.
  4. Then, spread a slice of Swiss cheese on each chicken breast, and top off the cheese slice with one slice of ham each.
  5. Now, roll the chicken up as tightly as you can, and secure the rolled-up chicken breast with toothpicks, if necessary.
  6. Set the stuffed rolled chicken aside to rest.
  7. While the chicken is resting, take a small bowl and make your coating.
  8. Combine the Parmesan cheese, paprika, garlic powder, dried tarragon, dried basil, and dry breadcrumbs.
  9. Use a spoon to stir it all together until it is all blended.
  10. Spread this coating out onto a wide tray or plate, and roll the chicken breasts through this spiced breadcrumb mixture, until they are thoroughly coated on all sides.
  11. Line up the coated chicken breast roll-ups in the greased microwave-safe pan, and drizzle them with melted butter.
  12. Slide the dish into your microwave and cook it on high for around 10 minutes.
  13. You will know the chicken is done when it is tender, cooked through, and the juices run clear.
  14. Take the dish out, and allow the chicken to rest for around 5 to 8 minutes.
  15. Serve with salad and warm bread, or pasta and sautéed mushrooms.
