Making rich and moist flourless brownie is not at all a difficult job. Simply blend the ingredients in a food processor, bake for half an hour, cool to room temperature and enjoy. These easy to make brownies also have a high nutritional value, with beans, which are a rich source of proteins, carbohydrates and fibre. So even if you are a diet conscious person, you can skip sugar and safely enjoy this recipe.
Ingredients
  • Can black beans: 1 (15-ounce),
  • Large eggs: 2
  • Eggs whites: 2
  • Melted butter: ¼ cup
  • Cocoa powder: ¼ cup plus 1 tablespoon
  • Vanilla extract: 1 teaspoon
  • Sugar: ⅔ cup
  • Salt: ⅛ teaspoon
  • Semi-sweet chocolate chips: ½ cup
  • Finely chopped walnuts (optional): ⅓ cup
  • Vegetable shortening
Instructions
  1. Carefully open up the can of black beans and drain the liquid. Rinse the beans thoroughly under running water.
  2. Put these rinsed beans in the bowl of food processor. If you don’t have a food processor you can use a blender or electric mixer.
  3. Add two large eggs and two egg whites to the beans.
  4. Melt ¼ cup unsalted butter in a pan on low heat and pour it into the blender.
  5. Also add ¼ cup of baking cocoa powder, one teaspoon vanilla extract and ⅓ cup of white sugar to the blender.
  6. Cover the food processor and pulse it on high to blend all the ingredients to form a smooth paste.
  7. Remove the blade, add half cup semi-sweet chocolate chips and stir the mixture. If you are using walnuts add them as well.
  8. Meanwhile, preheat the oven to 350 degrees Fahrenheit.
  9. Take an eight-inch baking tray and line it with parchment paper or grease it with butter.
  10. Pour the blended mixture into the prepared pan. You can also sprinkle some chocolate chips on the batter at this stage.
  11. Place the baking tray in the oven, preheated at 350 degrees Fahrenheit and bake the brownie for 30 to 35 minutes, or until the edges start to pull away from the sides of the baking pan.
  12. Place the pan on wire rack and allow it to cool completely.
  13. With the help of a foil, lift the brownie from the pan and transfer it to the cutting board.
  14. Remove the foil carefully and cut the brownie into pieces of your choice.
  15. Garnish with fresh raspberries and serve.
