Soft, luscious, and fudge-like (barring the absence of chocolate), pralines are creamy confections studded with crispy nuts, that are generally made during the holiday season, but can be enjoyed all year round.
Ingredients
  • Brown sugar: 1 cup
  • White sugar: 1 cup
  • Evaporated milk: ½ cup
  • Butter: 2 tablespoons
  • Pecan halves: 1¼ cups
  • Vanilla extract: ¼ teaspoon
  • A candy thermometer
Instructions
  1. To begin, prepare the pan in which you will be pouring your praline out to cool and set. This can be either a large, wide pan covered with a baking sheet, or even a large, cleared space on a marble slab or counter. Just make sure you grease both surfaces generously with un-salted butter.
  2. Then, start working on the pralines. Place a medium-sized saucepan on the stove over medium heat, and pour in the brown sugar, white sugar and milk. Allow this mixture to come up to a boil, and when it does, stir in the pecans, butter, and vanilla.
  3. Once you have stirred these ingredients in, allow the mixture to heat up, without stirring it. Use a candy thermometer to bring the temperature of the mixture to between 234 and 240 degrees F (112 to 116 degrees C).
  4. Once it reaches this point, take it off the heat, and allow it to cool for around 5 minutes. After it has cooled down a bit, beat the mixture vigorously with a spoon until it becomes creamy and thick.
  5. Then, waste no time and immediately pour it out onto the prepared surface. Spread it out, and allow it to set and cool. Once it becomes cool and firm, you can use a large knife to cut it into pieces.
