Yield: 1 servings
Utensils: Skillet, cutting board, knife, stove, serving plate.

Ingredients:
Olive oil: 1 tablespoon
Shallot, thinly sliced: 1
Pinch of sugar
Butter, for spreading
Slices of white bread: 2
Finely grated gouda cheese: 1/4 cup
Thin slices pepper turkey: 5
Sun-dried tomatoes, packed in oil, patted dry, and finely chopped: 3
Finely grated parmesan cheese: 1/4 cup
Crumbled goat cheese: 1 tablespoon
Freshly ground black pepper

Instructions

  • 1

Heat one tablespoon of olive oil over medium low heat in a small sauce pan. When the oil is hot (in about one to two minutes) add thinly sliced shallot to it.

  • 2

Add a pinch of sugar to the shallots and sauté them for seven to nine minutes or until they have caramelized properly. Keep stirring the shallots occasionally to prevent them from burning.

  • 3

While the shallots are being caramelized, prepare your grilled turkey and cheese sandwich.

  • 4

Take two slices of white bread and spread them generously with unsalted butter.

  • 5

Place the bread slices on a clean work surface, with the buttered surface facing downwards.

  • 6

Spread gouda cheese on one slice and top it with grilled turkey and sun-dried tomatoes.

  • 7

Check the shallots, if they are done, remove them from the heat and transfer to a plate lined with paper towel to drain excess oil.

  • 8

Place these shallots over the tomatoes and top them with the parmesan and goat cheese.

  • 9

Season your sandwich with salt and freshly ground black pepper and cover it with the second slice, making sure the buttered side is facing out.

  • 10

Heat a medium sized skillet over medium heat and place the sandwich in it. Cover the pan and allow the sandwich to simmer for five minutes or until the bread is nicely golden brown and crisp.

  • 11

Turn the sandwich and allow the other side to cook for another five minutes or until the cheese has melted and the bread is crispy.

  • 12

Remove the sandwich from the skillet and allow it to set for a minute before cutting it diagonally.

  • 13

Serve immediately with mixed green salad.
