Butterscotch or peanut butter cookies that freeze well are known as haystack cookies. In order to make the best haystack cookies, you have to prepare them a few days before serving or the other option is to make the cookies at the very last minute. Haystack cookies are famous for their rich flavour and they can be a great addition to your evening tea. You can also serve haystack cookies to your guests if you are out of choices.
Ingredients
- Butterscotch chips - 1 cup
- Peanut butter - ½ cup
- Peanuts - ½ cup
- Chow mein noodles - 2 cups
Instructions
- Grab a microwave safe bowl and place the peanut butter and the chips in it.
- You will need to microwave these for approximately 3 to 5 minutes.
- Remove them from the microwave once they melt into a thick paste.
- You may now add the chow mein noodles and peanuts in the mixture before blending them nicely.
- Make sure that noodles and peanuts are thoroughly coated with the mixture.
- By a spoonful, drop the mix on to a length of wax paper softly.
- You may now allow the haystack cookies to freeze in the refrigerator for approximately 40 minutes before serving them.
- Keep in mind that the haystack cookies freeze quite well; therefore, you can make them at the last minute.
