This is a perfect recipe for someone who has a sweet tooth for lemon cookies. These cookies are easy to make and taste delightedly good. So if you are planning to call friends over, this is a perfect way to treat them with something sweet. Instead of going to the mall to get a cake or a brownie, just relax and make this tasty delight at home.
Ingredients
  • Butter: ½ cup
  • Sugar: 1½ cup
  • Egg: 1
  • Flour: 2¾ cup
  • Baking powder: 1 tsp
  • Baking soda: ½ tsp
  • Salt: ¼ tsp
  • ReaLemon lemon juice: ½ cup
  • Colored sugar or Lemon Icing
Instructions
  1. To begin, take a large bowl to mix the butter and sugar together.
  2. Now beat in an egg and stir the mixture a bit more before adding lemon. The mixture should start looking creamy by now.
  3. Mix everything well and if things are the way they should be you will notice the dough will be soft.
  4. However, keep in mind that the dough should not be too soft - if so, you can add a few extra tablespoons of flour.
  5. With the addition of flour, the cookies will become less light in their texture, so if you like darker cookies then you should not add too much flour just for the sake of thickening the mixture.
  6. You should preheat oven to 400°F. Preheating reduces the time it takes for the cookies or the cakes to bake. So whenever you are planning to bake something it is always advisable to preheat the oven well before putting the cookies/cake inside.
  7. Roll out the dough on a well floured surface.
  8. Using cutters, you need to cut out the cookies.
  9. If you want, you can sprinkle the cookies with coloured sugar.
  10. Now place the cookies in a pan and bake for about six to eight minutes or until you can see the edges turn brown.
  11. When done, preferably using a baking glove, take the pan/tray out and let the cookies cool off. It is better that you do not put them in the refrigerator, instead let them cool down at room temperature.
  12. You can prepare lemon icing for the cookies by mixing two table spoons of ReaLemon juice.
  13. Mix it until it is smooth and then you can add food colouring if you want.
