How to Make Low Carb Crock Pot Fajitas

However, in reality you do not have to spend too much time in preparing all the ingredients. Utensils: crock pot, large bowl, microwave oven

Ingredients:
Flank steak or round steak: 1 1/2 -2 lbs
Salt: 1/2- 1 tablespoon
Bell pepper chopped: 1 large unit
Sweet onion, chopped: 1 large unit
Chopped green chilies: 1 can
Chopped jalapeños: 2 units
Chili powder (Mexican chili powder preferred): 2 teaspoons
Ground cumin: 1 tablespoon
Ground coriander: 1 tablespoon
Chopped tomatoes in juice: 1 can, 14 oz
Chopped fresh cilantro (optional): ½ cup or more
Juice of 1 Lime
Flour tortillas (whole wheat is preferred)

    First, you need to cut the roast into pieces and place it inside a crock pot. Add in onion, peppers, seasoning and tomatoes as you cover the pot before placing it over high heat. Bring the mixture to a boil and then lower the heat to medium level. Cook for another 2 hours or until you find the meat easily falling apart.

    Remove the meat from the pot, place it into a large bowl and allow it to cool for few minutes. Once it is easy to handle, shred the meat using a fork or just pull it apart using your bare hands. Here, you should make sure that you have properly washed your hands before pulling the meat apart.

    Pour the sauce from the pot over the meat and stir well. Now it is time to stir in lime juice and cilantro.

    Now wrap the tortillas in a clean dishtowel and place them in the microwave oven for around 15 seconds to 1 minute. Take them out and place them on the table, along with the already prepared meat and all the condiments, such as cheeses, salsas, refried beans, fresh chopped green onions, sour cream etc.
