Mexican wedding cookies or ‘pastelitos de boda’ are white snowball-shaped cookies which are traditionally served at Mexican weddings. These cookies are also known as Snowball Cookies in some regions and by following some simple instructions, you can easily make them.
Ingredients
  • All-purpose flour - 2 cups
  • Almond extract - ½ tbsp
  • Chopped pecans - ¾ cup
  • Powdered sugar - ¾ cup
  • Salt - ½ tbsp
  • Unsalted butter - 1 cup
  • Vanilla extract - 2 tbsp
Instructions
  1. You need to preheat the oven to 350 degrees F.
  2. Now toast the pecans in the oven for almost six to eight minutes.
  3. You are required to place the ¾ cup of chopped pecans on a cookie sheet and then place it in the oven.
  4. After toasting the pecans, you need to process them.
  5. You can either use a blender or a food processor for this purpose.
  6. In case you do not have these items, you can simply take a knife and chop the pecans.
  7. Take a mixing bowl and add one cup of unsalted butter, ½ tablespoon of salt, two tablespoons of vanilla extract, ½ tablespoon of almond extract and ¾ cup of sugar.
  8. Then you need to mix the ingredients until the batter becomes fluffy.
  9. Now you need to add the processed pecans in the mixture.
  10. Next add two cups of all-purpose flour in the mixing bowl containing all the ingredients.
  11. Mix the ingredients thoroughly.
  12. After adding the flour and mixing the ingredients, you need to shape the dough.
  13. Shape it into one inch balls or in size of large marbles.
  14. Next you need to place the shaped dough in the greased cookie sheet.
  15. Place it in the oven and bake for 15 minutes or until it starts turning brown.
  16. Now cool the cookies after taking them out from the cookie sheet.
  17. Later you need to roll the balls in the remaining powdered sugar and serve.
