You can make the dip first so that it is ready when you fry the rings fresh. Take a medium mixing bowl. Add to it the mayonnaise, ketchup, horseradish sauce and paprika. This will make a very spicy and hot dip. Season with salt and freshly ground pepper according to taste.  After you combine everything well, place the salt in the refrigerator so that it is chilled while you make the rings. You can also add a few different ingredients if you want your dip to have a special taste or flavour that you will enjoy. It does not hurt to experiment as long as you stay true this recipe.

Now make the batter for the rings. Take a mixing bowl and add to it flour, cornmeal and salt. Whisk the egg in another bowl and add it to the mixing bowl. Add enough water or beer to make a thick but consistent batter.

Peel the onions. If your eyes sting because of them, peel them under water to prevent this. Wash the onions well. Now slice them horizontally to make rings. After you slice both onions, separate the rings from each other. Wash them all under the sink water. Place the rings on a tissue paper to absorb the excess water.

Place the saucepan on medium heat. Pour in some vegetable oil, enough to cover the rings. Now dip the rings in the batter and then place in the oil for frying. You can use a fork or your hands for this.  Fry both sides of the onions until they are brown. Take off the rings from the pan and deposit on a plate cover with paper towels. These towels will absorb the excess oil. Serve hot with the dip.
