Ingredients:
Butter – cubed: 1 cup
Fresh or canned – peeled and cubed: 1 cup
Lime juice – freshly squeezed: 1 tablespoon
Garlic clove – finely minced: 1
Prepared mustard: ½ teaspoon
Salmon fillets (1 pound each): 2
Fresh or frozen peaches – peeled and chopped: ½ cup

In a large microwavable bowl, mix together 1 cup cubed butter and one cup of peach slices.

Place the bowl in your microwave oven, setting it on high.

Now microwave the butter mixture for 40 to 50 seconds.

Take out the bowl from microwave oven and drizzle one tablespoon of fresh lime juice over the mixture.

Add in one finely minced garlic clove and half teaspoon of prepared mustard.

Use a large spoon to thoroughly blend the ingredients until coated well in the melted butter. Set this mixture aside to cool well.

Once cooled appropriately, shift few tablespoons (about one cup) of this peach-butter mixture into a small bowl and set aside for drizzling and serving.

Place the 2 salmon fillets in a large re-sealable plastic bag and top them with the remaining peach-butter mixture.

Seal the plastic bag properly and turn it from various angles until the salmon fillets are coated well. Leave it for 15 to 20 minutes until marinated thoroughly.

Unseal the plastic bag and drain the mixture. Arrange the coated salmon fillet on a plate and discard the marinade mixture.

Now lightly dampen a large paper kitchen towel with some vegetable or cooking oil, using tongs. And lightly coat your grill rack as well.

Arrange the marinated salmon fillet on the lined grill rack, with the skin side down.

Cover the salmons and grill the over medium heat for 4 to 5 minutes.

Drizzle half of the kept back peach-butter mixture over the salmon fillets. Continue grilling for 13 to 15 more minutes or until salmon flakes easily with a fork, basting time to time.

Use tongs to arrange the grilled salmon fillet on a large serving plate and spoon the remaining peach-butter mixture over them.
