- Cold water: 5¼ c
- Bottled lemon juice: 1¾ c
- Granulated sugar: 7 c
Instructions
- Wash the peaches and remove any stems leaves from them. You need to peel them so that the skin does not come in the pie.
- There is an easy trick for them. Since they are so thin, you cannot peel them off with a knife. Dip the peaches in boiling hot water for around a minute.
- Take them out and place them in a pot of cold water under the sink. Now use your fingers to peel off the skin. Make sure that you have washed your hands well before doing so.
- Slice the peaches into small chunks. Now you can add food preservative substance like fresh fruit to prevent the fruit from turning colour while you prepare the sauce.
- Take a large cooking pot and pour in the 5¼ c. cold water, 1¾ c. bottled lemon juice, 7 c. granulated sugar and 2 c plus 3 tbsp Clear Jel. You can also use fresh lemon juice if available. Bring the solution to boil while constantly stirring so that it does not stick to the bottom and sides. It will start thickening. When it reaches boiling, keep on for a minute and then remove from heat. Add the peaches to this solution.
- Take out clean sterilized jars. Fill these with the filling. Now place the lids on the jar. Place the jar in a water bath for thirty minutes and you are good to go.
- The beauty of this filling is that you can use it overtime . So when you have an abundance of peaches on your hands and you are looking for the best option to preserve them, a pie filling might be the top option.
