A perfect sugar cookie is marked by a crispy exterior and a soft, chewy interior. Great for everything from parties to regular snacking, sugar cookies can be eaten as they are, or fancied up with coloured sugar and frosting.
Ingredients
  • All-purpose flour - 2¾ cups
  • Baking soda - 1 teaspoon
  • Salt - ½ teaspoon
  • Margarine - 1¼ cups
  • White sugar - 2 cups
  • Eggs - 2
  • Vanilla extract - 2 teaspoons
  • White sugar for decoration - ¼ cup
Instructions
  1. To begin, preheat your oven to 350 degrees F (175 degrees C), and prepare your cookie tray by spreading it with an ungreased cookie sheet.
  2. While cakes and certain cookies require the baking sheets to be greased, sugar cookies need to be baked on an ungreased surface.
  3. Now, take a medium-sized bowl, and pour in the flour, baking soda, and salt – mix these dry ingredients together with a spoon, and then set this bowl aside.
  4. Then, in a large bowl, add in the margarine and the two cups of sugar.
  5. Cream these together, until the mixture becomes light and fluffy.
  6. Once both ingredients are thoroughly incorporated, it is time to mix in the eggs.
  7. Do so by adding in one egg, beating it in thoroughly, and then adding in the second and mixing it in.
  8. Then, stir in the vanilla extract.
  9. Next, pour in the dry ingredients that had been mixed up earlier, and fold these in until they are just mixed.
  10. Now, roll the cookie dough into small balls (roughly the size of walnuts), and then roll them through the ¼ cup sugar that was reserved for decoration.
  11. Line the cookie balls up on the cookie sheet, keeping a 2-inch distance between individual cookie balls.
  12. Flatten them all slightly, by pressing down gently with the back of a spoon, or your hand.
  13. Then, slide the tray into the preheated oven, and bake for around 8 to 10 minutes until the edges of the cookies begin to brown.
  14. Once the cookies are done, take them out of the oven, and put the tray aside for 5 minutes.
  15. Then, use a spatula to slide them off the cookie tray, and transfer them onto a wire rack, to cool and set completely.
  16. Finally, store the cookies in an airtight container, or serve immediately.
