How to Make Pizza with Eggplant
While there are hundreds of different types of pizzas available in different parts of the world, if you are in search of something unique, you can try a pizza with eggplant, which is great for health and can be quite delicious as well. This kind of vegan pizza serves as an ideal alternative to the typical sausage or pepperoni, even if you are a meat eater. In order to lower the fat in the recipe, some people broil the eggplant, rather than frying it in oil.

Ingredients:
Eggplant: 1 large
Olive oil: about ¾ of a cup
Fast-acting yeast: 1 package (1/4 ounce)
Warm water: 2/3 cup
Salt: ½ tsp.
All-purpose flour: 1 2/3 cups
Grated Mozzarella: 3 ounces
Grated Asiago: ¾ ounce
Minced garlic: 2 tbsp.
Dried hot red pepper flakes: ½ tsp.

Broil the eggplant
The first step towards making pizza with eggplant is to cut the eggplant into 1/3-inch thick rounds. Grab a foil-lined large baking sheet and arrange the pieces of eggplant in a layer. You are now required to brush the eggplant pieces with oil before seasoning them with salt. Broil the eggplant about 2 ½ inches from heat for about 3 to 8 minutes on each side or until the side turns golden brown. -

Make dough
The yeast needs to be dissolved in warm water before you blend salt, a couple of tablespoons of olive oil and flour in a food processor. While the processor is on, you need to add the whole yeast mixture and blend it until it forms a ball. On a lightly floured surface, knead the dough for five minutes. Coat the dough with olive oil. You may now leave the dough in a bowl covered with plastic wrap for about 60 to 75 minutes and allow it to rise. -

Preheat the oven
While the dough is rising, you can preheat the oven to 500 degrees F. -

Shape and stretch
You may now spread flour over the dough and shape and stretch into an about 12-inch round before pouring a lot of baker’s peel over the dough. -

Assemble the pizza
Sprinkle about ¼ of the cheese over the dough before covering it with eggplant and then sprinkling the remaining cheese over it. Put a skillet over medium heat and cook red pepper and garlic. Once evenly cooked, you may spoon it over the eggplant. Having lined up the edge of the peel with far edge of stone, you may put the pizza in the oven and let it bake for 12 to 15 minutes or until it is crisp.
