Are you a fan of soups? Do you love potatoes in general? The Potato Leek Soup is the meal for you. It is so easy to cook you don’t have to be dependent on anyone if you are craving for this meal. Using the mentioned below recipe, you can easily make this soup in 40 minutes or less.
Ingredients
  • Potatoes, peeled and cut into large pieces - 6
  • Whites only, thoroughly washed - 8 leeks
  • Stalks celery, roughly chopped - 3
  • Onion, peeled and quartered - 1 medium
  • Bay leaf - 1
  • Chicken stock - 2 quarts
  • All-purpose flour - ½ cup
  • Melted butter - 4 ounces (1 stick)
  • Heavy cream - 1 cup
  • Finely chopped fresh thyme leaves - 1½ teaspoons
  • Salt and pepper
Instructions
  1. Take a large pot and place potatoes in it.
  2. Next, take 4 of the leeks while reserving the rest, and add them to the pot.
  3. Put it on heat and add celery, onion and bay leaf to it.
  4. Let it heat and after couple of minutes, add chicken stock to the pot.
  5. Let it come to a boil.
  6. It will take around 15 minutes but continue boiling until the potatoes are really soft.
  7. Now chop the remaining four leeks.
  8. Take flour and butter and mix them in a small bowl to make a roux if you want to thicken the soup.
  9. Add the remaining leeks, roux, cream, fresh thyme to the bowl.
  10. Add some salt and pepper according to your taste.
  11. Remove lay beef and by using a blender or food processor, blend soup until it is smooth.
  12. After all those steps are done, pour the soup into a medium pot and simmer for around 20 minutes.
  13. Continue doing that until the soup has thickened.
  14. Serve and enjoy.
