Steps to Make Potatoes and Red Onions Cake – Italian Recipe

Ingredients:
Potatoes: 4 big
red onion: 1 big
Whole eggs: 2
Olive oil: 2 tablespoons
Butter
Salt and pepper: To taste
Grated Parmigiano or Romano cheese
Chopped Italian parsley
Boiled eggs: 2
Mozzarella cheese
Sausage, ham or any other meat

    Peel the potatoes and boil them in a sauce pan. Side by side, chop the onions and put them in a pan to sauté with some olive oil. They should get soft and translucent. Put them aside once done.

    Preheat the oven to 350 degrees. In a mixing bowl, mash the potatoes and add salt, pepper, 2 tablespoons of olive oil and some grated Romano cheese. Put the eggs in the end when the potatoes have cooled down a bit so that the eggs don’t get cooked. If you do not have olive oil, simple butter can also be used. After the mixture has been mixed, add the parsley in it.

    Butter an oven safe dish and spread the mixture if potatoes as the first layer. If you are adding any other ingredient like eggs, ham, mozzarella or sausage, ad a generous layer of it. You can also use any leftover chicken; it will make the dish more protein rich.

    Place a second layer of the mashed potatoes on top the sausages or eggs and then top the layer with the cooked onions and also add the oil of the onions. It will enhance the flavour of the potatoes. Sprinkle Romano or parmigiano cheese on top generously according to your love for cheese. Bake the dish for 20 minutes in the preheated oven. The top of the cake should get a little brown. Give it more time if required. Take the dish out and let it cool for 15 minutes outside before serving it.
