S’mores are a campfire favourite, and the combination of crispy graham crackers, melted chocolate and gooey marshmallows has always been a winner. The flavour combination has proved so delightful that several variations of s’mores have developed overtime, one of them being a s’more pie, which combines the three key ingredients to make a more kitchen-friendly variant of the classic campfire snack.
Ingredients
  • Crust:
  • Graham cracker crumbs (about 12 crackers): 1½ cups
  • Unsalted butter, melted and cooled: 6 tablespoons
  • Sugar: 2 tablespoons
  • Filling:
  • Heavy cream: 1 cup
  • Semisweet chocolate, chopped: 8 ounces
  • Eggs: 3 large
  • Vanilla extract: 1 teaspoon
  • Mini marshmallows: 2 cups
Instructions
  1. To begin, preheat your oven to around 350°F. While it is heating up, you can start working on the crust for your pie. For the crust, take a bowl, and put in the graham cracker crumbs, butter, and sugar.
  2. Mix these together thoroughly (use a spoon, or get into it with your fingers), until the texture becomes damp and crumbly.
  3. Take a 9-inch pie plate, and pour the crumb mixture into this.
  4. Spread it all over the pan, pressing it in firmly over the bottom and sides. Make sure you pack it in well, and slide the pie plate into the oven, to bake for around 10 minutes – keep a close check, to make sure it does not burn.
  5. After the crust has set and become firm, take the pie plate out of the oven, and place it on a wire rack to allow it to cool completely.
  6. While the pie crust is cooling off, you can start assembling the filling. Place a small sauce-pan on the stove over medium heat, pour in the cream, and bring it to a boil.
  7. Put the chocolate in a bowl, and once the cream has boiled, pour it over the chocolate.
  8. Allow it 5 minutes to set in, then use a spoon to stir it all together – the chocolate will melt, and the mixture should become smooth and creamy.
  9. Add in the eggs and vanilla, and whisk it all together until the entire mixture is smooth, velvety, and well-blended.
  10. Pour this mixture into the pie crust, and bake it until it sets – this should take around 25 minutes. Once it is done, take it out and cool it on a wire rack.
  11. Just before you serve the pie, preheat your broiler on high, spread a layer of marshmallows over the top of the pie, and broil it by placing it on an oven rack that is set 5 inches away from the heat.
  12. The broiling should take 20 to 30 seconds, or until the marshmallows are toasted and take on a nice golden colour. Take the pie out, and serve immediately.
