Total time: 70 to 80 min
Yield: one large loaf
Utensils: Large mixing bowl, spoon, whisk, baking sheets, baking tray, oven, rolling pin, kitchen towel, plastic wrapping sheet

Ingredients:
Sponge:
sourdough starter: ¼ teaspoon
all-purpose flour: 2 cups
warm water: 1 cup

Dough:
Flour: 3 cups
Warm water: ¾ cup
Sugar: 2 tablespoons
Salt: 1½ teaspoons
Yeast: ½ teaspoon
Whole garlic clove: 2/3 cup

Instructions

  • 1

Take a large mixing bowl and place ¼ teaspoon of sourdough starter in it. Top with 2 cups of flour and then stir in 1 cup of warm water. Blend the sourdough starter and flour until they mix well with the water and form a thick paste. Use a plastic wrapping sheet to cover the mixing bowl and set it aside for approximately 18 to 20 hours – at room temperature. It is better to leave it overnight for more consistency.

  • 2

Check out the sponge at the end of 18 to 20 hours. If it is expanded/raised or double in size, smells pleasingly sour and bubbling – it means your sponge is all set to go. If not, then leave it for few more hours.

  • 3

Top the sponge with 3 cups of flour and ¾ cup of warm water. Use your hand to mix up all the ingredients properly.

  • 4

Add in 2 tablespoons of sugar, 1½ teaspoons of salt and ½ teaspoon of yeast.  Continue mixing until it forms a thick but smooth dough.

  • 5

Cover the bowl and set aside for 25 to 30 minutes until the dough rises well and double in size.

  • 6

Now unseal the bowl and knead the dough again for 5 minutes. Cover it again and let it rest for 2 to 3 hours.

  • 7

Place the dough on a lightly greased baking sheet or baking tray and flatten it with your hands.

  • 8

Now evenly sprinkle 2/3 cup of whole garlic clove over the top of the dough and roll it up from all angles, pinching the sides and giving it an oblong loaf shape.

  • 9

Cover the dough with a clean kitchen towel and set aside for 1 to 2 hours or till double in size.

  • 10

In the mean time, turn on your oven and preheat it at 475°F (246.111 °C).

  • 11

Now cut the top of the raised loaf four times, using a cake knife.

  • 12

Spray the loaf and preheat oven with some water.

  • 13

Set the baking tray in the oven and bake the loaves for 3 to 5 minutes.

  • 14

Now, reduce the oven’s temperature to 375°F (190.556 °C), spray the loaf and oven with some more water and change the angle of the baking tray.

  • 15

Bake for 35 to 40 more minutes or until the Sourdough Garlic Bread is browned or deep golden from all sides and thumps hollow in the bottom.

  • 16

Remove the baking tray from oven and place in the cooling rack until lightly warm.

  • 17

Place the sourdough Garlic Bread in a large serving plate and cut into medium slices.

  • 18

Dish up immediately for a more yummy taste.
