Strawberry banana buttermilk pancakes are one of the tastiest bakery items. They are a perfect blend of strawberries, banana, butter, milk and cream. They are not very hard to make, but you need to spend some time to learn if you are making them for the first time. However, once you start making on regular basis, it will become very easy for you.
Ingredients
  • Whole wheat pastry flour (or all-purpose flour): 1½ cups
  • Brown sugar, packed: 1 tablespoon
  • Baking powder: 1½ teaspoons
  • Baking soda: ½ teaspoon
  • Salt: ¼ teaspoon
  • Low fat buttermilk: 1¼ cups
  • Eggs, lightly beaten: 2
  • Vanilla extract: 2 tablespoons
  • Diced strawberries: 2 cups
  • Mashed bananas (about 1 cup): 2
  • Oil: 1 tablespoon
  • Cooking spray or additional oil, for pan
Instructions
  1. First of all, take a large bowl and put flour, baking soda, baking powder, salt and sugar in it. Mix them well.
  2. Now, take another bowl and put the eggs, buttermilk, vanilla, oil and mashed bananas in it. Blend them well.
  3. Then, add the flour mixture to the banana mixture until the time when you see that both of them have mixed well together and have moistened. After that, add strawberries into the mixture and let the batter settle for around ten minutes.
  4. Take a skillet and preheat it on a stove at medium heat. Spray it with the cooking spray. It is very important for you to take a skillet which is not sticky.
  5. Now, you have to put the batter into the skillet by the help of a spoon. Put 2 tablespoonfuls or up to ¼ cup, it depends upon your own choice). Cook them for around 3 to 4 minutes until you see bubbles forming on the edges of the skillet.
  6. They will start taking the shape of pancakes. Flip them and cook them for 2 to 3 more minutes or until the time comes when they become golden.
