Ingredients:
Fresh bacon with bone, rinsed and dried: 2 1/2 pounds
Fresh ginger, scraped and thinly sliced lengthwise 1/4 inch thick: 1-inch piece
Olive oil: 2 1/2 tablespoons
Cloves garlic, thinly sliced: 6 medium
Hot bean sauce: 1 1/2 tablespoons
Kohlrabi (about 1 1/2 pounds), peeled, quartered, and thinly sliced: 1 large
Coarse salt: 1/2 teaspoon
Light soy sauce: 1 tablespoon
Szechuan chile oil: 1/2 teaspoon
Scallions, sliced in half lengthwise and cut into 1-inch pieces: 1 bunch
Sesame oil, for drizzling

    Take a medium-sized stockpot and put bacon and ginger in it. Now pour water into the pot so that the ingredients are covered with it. Bring it to boil, skimming, in order to remove any unnecessary fat.

    Reduce the heat and cook for around 40 minutes. Make sure it is properly covered during the cooking process. You can do it ahead of making the complete recipe, and put it in the refrigerator overnight.

    Remove the bones from the bacon, after you take it out of the liquid. Slice the meat and they should be around 1/4 inches thick.

    Take a wok and place it over the heat. Add 1 1/2 tablespoons olive oil in it and heat well. Now add sliced bacon, garlic and hot bean sauce into the oil and cook for around 5 minutes, stirring continuously. Transfer to a plate and rinse dry the wok.

    Place the wok back on to the heat and add 1 tablespoon of olive oil. Heat the oil and add kohlrabi and salt and mix them well, before adding meat, scallions, Szechuan chile oil and soy sauce to it. Cook for 2 minutes. Transfer it to the serving plate and drizzle sesame oil over it.
