How to Make Vegan Banana Bread

Ingredients:
All-purpose flour: 2 cups
White granulated sugar : ¾ cup
Dark brown sugar: ½ cup packed
Baking soda: 3 teaspoon
Salt: ¾ teaspoon
Cinnamon: ¾ teaspoon
Plain soy milk or almond milk: ½ cup
Apple cider vinegar: 1 teaspoon
Mashed banana, from about 4 large very ripe bananas: 2 cups
Canola oil: ¼ cup
Maple syrup: 2 tablespoons
Vanilla extract: 1 teaspoon
Walnuts (optional)

    Place the oven on pre-heat of 350 F. Grease the loaf pan lightly with oil so that the bread comes off easily when baked.

    Pour the dry ingredients of flour, sugar, baking soda, salt and cinnamon. Sift the ingredients together so that they are combined well.

    Beat the soy milk and the cider vinegar together in a large mixing bowl. Now let this mixture stand for around two minutes. Add mashed banana, canola oil, maple syrup, and vanilla extract to the mixture. Whisk together the ingredients so that they are combined.

    Now add the dry ingredient mixture to the wet mixture. Pour the ingredients slowly, confirm that there are no lumps. Combine everything roughly. You can add in the walnuts if you want to give it a crunchy and nutty texture. Pour this batter into the greased pan that you prepared earlier.

    Place the pan into the already warm oven and bake it for an hour. You will know the bread is ready by inserting a toothpick in the centre. If it comes out clean, the bread is ready. Now let it cool on a cooling rack for half an hour. You can consume it right away or store in for later use.
