How to Make Vegan Okra and Tomatoes
Vegan okra and tomatoes is one of the easiest cuisines which can be prepared in a very less time. It is a perfect food for a lunch or supper, if you don’t have much time for cooking or you just don’t want to spend more time in the kitchen. Utensils: Cups, saucepan, spoons, frying pan, skillet and bowls.
Ingredients:
– 5 tbsp. vegetable oil
– 1 celery stalk, thinly sliced
– 1/2 onion, peeled and thinly sliced
– 1 jalapeño, seeded and thinly sliced
– 3 garlic cloves, thinly sliced
– 1 tbsp. tomato paste
– 2 tbsp. red wine vinegar
– 1 1/2 cups vegetable broth
– 1 tsp. fresh rosemary, finely chopped
– 1/2 to 3/4 lb. fresh okra, sliced on a bias into 1/2″ slices
– 5 plum tomatoes, diced
– Salt and pepper (to taste)

First of all, you have to prepare the base sauce. For making the base sauce, you will need to warm 3 tablespoons of vegetable oil in a frying pan on a high heat. Then, add the onions, celery, jalapeno into the pan and sauté the mixture for around two minutes. You will have to stir all the ingredients while cooking. On the other hand, take a small bowl and put tomato paste, vinegar and vegetable broth into it. Mix all the three ingredients well. Put the tomato paste in the pan which contains the onion mixture. After that, add the salt and rosemary.

To make okra, you will have to take another frying pan. Pour some cooking oil in it and heat it for around two minutes on high heat. Then, spread the okra in the pan and let it turn brown (it will take around 3 minutes). Keep stirring the okra while cooking.

Now, you have to add the okra into the base sauce. After that, add tomatoes into the pan and season them with black pepper.

Transfer the okra and tomatoes into a plate and let them cool down for few minutes before serving.
