Preparing a main dish for the guests is an easy task, as one has numerous options available for this purpose. However, the real confusion arises when there is a need for making something as a side dish. Other than looking for an easy recipe, one also prefers a dish, which does not take much time in preparation. In this regard, there is nothing better than mashed potatoes, cooked with cheese.
Ingredients
- Yukon gold potatoes: 3 pounds (about 9)
- Low-sodium chicken broth: 1 cup
- Unsalted butter: 6 tablespoons (3/4 stick)
- Water (for boiling)
- Pepper (as needed)
- Salt (as needed)
- Kraft Velveeta cheese: 1 lb
Instructions
- Take a medium sized pan and fill it half with water. Add some salt to it and boil it on medium heat so that the salt gets dissolved properly.
- Wash the potatoes properly before peeling them. Although their skin has yet to be removed, you still need to make sure that they are perfectly clean.
- Using a peeler, remove the skin of the potatoes and wash them once more.
- With the help of a sharp knife, cut the potatoes in small chunks. Make sure that the pieces are not too small.
- Put the potato chunks into boiling water and add some more cold water to the pan. Allow the water to boil once again and then lower the flame.
- Leave the potatoes in the pan for 20 minutes, so that they become tender. Make sure that the flame is at its lowest point.
- Once the potatoes get tender, remove the pan from the stove and drain all the water. Let the potatoes cool for a few minutes.
- Using a fork, you can mash the potatoes, so that they form a paste like shape. You can add some seasonings at this point and mix them properly.
- Finally, add the Velveeta cheese to the mashed potatoes and serve them to your guests.
