Jamie’s Cranberry Spinach Salad Recipe

Spinach, toasted almonds and dried cranberries mix together in a sweet and tangy dressing of oil and vinegar. The recipe is for people who want to try something new and want it to be quick. Ingredients:

– 1-1/2 teaspoons butter
– 1/4 cup and 2 tablespoons almonds, blanched and slivered
– 1/2 pound spinach, rinsed and torn into bite-size pieces
– 1/2 cup dried cranberries
– 1 tablespoon toasted sesame seeds
– 1-1/2 teaspoons poppy seeds
– 1/4 cup white sugar
– 1 teaspoon minced onion
– 1/8 teaspoon paprika
– 2 tablespoons white wine vinegar
– 2 tablespoons cider vinegar
– 1/4 cup vegetable oil

    Melt the butter in the saucepan. Toast the almonds in it over medium heat. Remove from the heat and let them cool down in a separate bowl.

    Add the spinach to the salad bowl. Add almonds and cranberries to the spinach and toss well to combine.

    Prepare the dressing in a small mixing bowl. Whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Right before serving, pour the dressing over the spinach and toss well. If you pour the dressing a long time before serving, the spinach will loose its freshness.
