Kaleidoscope Salad Recipe

Ingredients:
– 1 Lettuce. torn into bite sized pieces
– 1 pound fresh spinach, torn into bite sized pieces
– 1 onion, thinly sliced
– 3 Celery, sliced
– 6 Garlic chives, chop them up
– 8 ounce frozen peas, blanched, drained and let to cool down
– 8 ounce frozen corn, blanched, drained and allowed to cool down
– 2 English cucumbers, sliced
– 16 ounce pineapple bits in juice, drained
– 2 tomatoes, cut into wedges
For the dressing:
– 2 limes
– 2 tablespoon parsley, chopped
– 2 tablespoon chives, chopped
– 2 garlic cloves
– 1.5 cup butter milk
– salt
– pepper

Dressing:
In your blender, add one by one the parsley, garlic and chives. Blend to mix them. Squeeze the limes into it, with the blender still running. Add the buttermilk slowly. It will make the paste thick. Add salt and pepper according to your taste. Put it in the refrigerator till you need to serve. -

Salad:
Toss the lettuce, cucumber, spinach, onion and chives together. Put in peas, corns, pineapple and tomato wedges on the veggies in the plate. Add the dressing you prepared on one side of the plate. -
