Marinated Sundried Tomato Salad Recipe

Utensils needed: mixing bowl, cling film, salad bowl
Ingredients:
– 1 jar of dried tomatoes (not in oil)
– handful of basil, chop it up
– 2 cloves garlic, chop it
– 200ml olive oil
– 200 ml vinegar
– 1/2 kg cherry tomatoes, cut in half or sliced
– a bunch of spring onions, chopped
– handful of toasted pine nuts

Put the dry tomatoes in a bowl of cold water and let them remain in it till they are soft. When they are, drain the water and cut the tomatoes on a cutting board into pieces.

In another bowl, mix the basil, garlic, olive oil and vinegar. Whisk together well. This will be your marinade. Mix the tomatoes into this. After mixing well, cover this bowl with a cling film and place it in the refrigerator. Let it remain there overnight.

Before serving the next day, mix the nuts, cherry tomatoes and onions. Add the marinated tomatoes to it and toss well. The salad is ready to please everyone around it. You can serve it with some cheese or garlic bread to add to the package.
