Mediterranean Roast Chicken Salad Recipe

Ingredients:

– 1 whole Chicken
– ¼ cup Thyme (chopped)
– ¼cup Oregano (dried)
– 1 cup Kalamata Olives
– ¼ cup lemon Juice
– ½ cup of potato wedges
– ¼ cup Minced Garlic
– Salt (to taste)
– Grounded Black Pepper (to taste)
– ¼ cup Olive Oil

Instructions

    Take a small bowl and prepare a muddle of thyme, olive oil, oregano, lemon juice, grounded black pepper, salt, minced garlic. Now brush the chicken with this marinade and leave for about two hours.

    After the marinade is ready, brush the roasting rack with oil and heat the oven on maximum temperature for about 5-10 minutes.

    Now lower down the oven temperature to normal and put the chicken on the roasting grill and tie the legs and wings together with the help of a wig. Keep on checking it from time to time until the chicken gets golden brown.

    Now as the chicken gets half done, add potatoes and olives in the oven as well. Wait until the chicken gets fully done and then take the chicken and the veggies out in the serving platter.

    After taking it out leave it for about 10 to 15 minutes.

    Do not forget to remove the wig from the legs and wings. Now that you have removed the wig, the Mediterranean Chicken Roast is ready to be served!
