Ingredients:
– 1 clove garlic
– 1 (1 pound) loaf Italian bread
– 1 cup chopped tomatoes
– 1 cup cucumber – peeled, seeded and chopped
– 1 cup chopped red onion
– 1 clove garlic
– 2 cups chopped fresh basil
– 1/8 cup chopped fresh thyme
– 1/4 cup olive oil
– 2 tablespoons balsamic vinegar

Make the preparations first. Chop up the tomatoes. The cucumber has to be peeled first, the seed part separated with a spoon or knife and then chopped like the tomatoes. This is followed by the onions. Mince the garlic and prepare the rest.

Make bite sized pieces of the bread. If it is too fresh you can try toasting it to make it crunchier and dry.

Take the salad bowl out and rub its interior sides well with the garlic clove. In it mix together the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add the olive oil and vinegar and toss well so that they get coated on everything. Serve immediately while the vegetables are still fresh and the bread crunchy to the bite.
