Orange Chicken and Rice Salad Recipe

Ingredients:
– 200g long-grain rice
– 300g carrots, peeled and grated
– juice of 1 large orange
– 2 tsp English mustard
– 2 tbsp olive oil
– 6 tbsp snipped fresh chives
– 400g ready-cooked skinless chicken breast fillets, cut into bite-sized chunks
– 4 tbsp pistachio nuts
– 200g lamb’s lettuce
– orange wedges and pecans for garnishing

Fill the saucepan with water and bring to boil. Add the rice and bring to boil again. Reduce the heat now and let it simmer for twenty minutes or until the grains have gone tender. Drain into a bowl.

While the rice is cooking, make the salad. Toss together carrots, orange juice, mustard, oil and chives in a large bowl. Add the chicken to all this and mix in with pistachio nuts.

When the rice is cooked, add it to the salad and toss gently to mix without damaging the grains. Mix in the lettuce leaves. Garnish with orange wedges for a more attractive appearance. Scatter pecans all over in the end. Serve right away.
