Pimm’s Melon Cup Recipe
Pimm’s Melon Cup is the name of a classic summer salad. This salad is inspired from a terrific summer drink which is garnished with lots of fruits therefore it almost looks like a fruit salad. Pimm’s Melon Cup is made with ingredients like berries, cucumber, pear and sweet melon, which are marinated in Pimm’s and then dished up in the shells of the melon. For decoration people usually use borage flowers to give it a traditional finish. In this way you will get a salad that is not only great in taste, but also remains an excellent source of obtaining different vitamins and other essential elements.

Ingredients:
– 1 small Ogen melon
– 1 small cantaloupe melon
– 200 g (7 oz) strawberries, sliced
– 1 pear, cut into 2.5 cm (1 in) chunks
– ¼ cucumber, cut into 1 cm (½ in) dice
– 1 carambola (star fruit), cut into 5 mm (¼ in) slices
– 6 tbsp Pimm’s
– 2 tbsp shredded fresh mint or lemon balm leaves

Take the melons and cut them into half horizontally and then take out the seeds from their centre. After removing the seeds of melons, scoop out its flesh as well with the help of a small spoon or melon baller and transfer it to a large bowl. Do not throw away the melon shells!

Then, add diced cucumber, pear chunks and sliced strawberries in the large bowl, which contains melon flesh. Subsequent to this add some carambola (star fruit) in this mixture after chopping it and preserve the remainder for decoration.

Now shake over the Pimm’s on these fruits, then add shredded lemon balm or mint and stir all these ingredients gently so they could mix together. After stirring the ingredients cover them with cling film and leave them aside, or put the bowl in the refrigerator for about 20 minutes so it could marinate.

After that take out odd pieces of melon flesh from its shells in order to make them smooth with the help of a small spoon. When the fruit mixture is marinated after 20 minutes, then bring it out and pile in the shells. Decorate this mixture with borage flowers and remaining slices of carambola.
