Pumpkin Cranberry Bread Recipe

The Pumpkin Cranberry Bread is very easy to make. It’s a delight which is flavoured with pumpkin puree as it enhances the nutritional value of any diet. It is very popular in South America as well as in North America. Fresh cranberries and pumpkin always enhance the crunch in bread. Sometimes frozen or dried cranberries can be used if fresh cranberries are not available.

The pumpkin and cranberries have a long history as people used to make sweet and savory dishes, making stews, breads, porridges, puddings and pies. It is a delightful treat in mid summers added with spices, orange juice, orange zest, and fresh cranberries.

Ingredients:
Fresh or frozen cranberries, coarsely chopped: 1 cup (120 grams)
All-purpose flour: 1 2/3 cups (215 grams)
Baking powder: 1/2 teaspoon
Baking soda: 1 teaspoon
Salt: 1/2 teaspoon
Orange zest (outer skin of orange) (optional): 1 tablespoon
Ground cinnamon: 1/2 teaspoon
Ground ginger: 1/2 teaspoon
Ground cloves: 1/4 teaspoon
Unsalted butter, room temperature: 1/2 cup (113 grams)
Granulated white sugar: 1 cup (200 grams)
Pure vanilla extract: 1 teaspoon
Large eggs: 2
Canned pumpkin puree: 1 cup (240 ml)
Orange juice: 1/4 cup (60 ml)

Instructions

    Wash all the bowls, spoons and cups before start.

    Preheat the oven to 350 degrees F (177 degrees C). Place an aluminium rack in the oven after spraying the slight amount of butter in it.

    Pick up a bowl and put flour, baking powder, baking soda in it. Whisk the mixture together and add ginger, salt, orange zest, cinnamon and cloves.

    In another bowl, beat the mixture of butter and flour and keep beating until it gets light and fluffy. It will take about 2 to three minutes before the mixture will be all ready to put into the oven.

    Now add eggs in the butter and flour mixture but be sure that you put one egg at a time. It will be lot easier for you to whisk. Also put vanilla extract and pumpkin puree in the mixture. Put frozen or dried cranberries in the butter and flour mixture and whisk tighter all the ingredients.

    Take out all the prepared blended mix and put into the preheated oven for baking. It will take 55-65 minutes to prepare delicious Pumpkin Cranberry Bread.

    Take out the bowl from oven and place on a cool place for about 10 minutes. Removing bread from the pan and enjoy Pumpkin Cranberry Bread.
