Quinoa Salad with Dried Fruit Recipe

Quinoa is a rice like grain which is rich in carbohydrates and fibers and is absolutely gluten free. It has very little flavor of its own and melds in very well with other ingredients that are mixed in. In this recipe it is combined with an interesting collection of dried fruits and nuts which make it an attractive piece of high protein meal. It is also very easy and does not take much of an effort. Utensils needed: Saucepan, large bowl

Ingredients:

– 1 1/2 cups quinoa
– 1/4 teaspoon salt
– 3 1/2 cups water
– 1 bunch green onions, chopped
– 3/4 cup chopped celery
– 1/2 cup raisins
– 1 pinch cayenne pepper
– 1 tablespoon vegetable oil
– 1 tablespoon distilled white vinegar
– 2 tablespoons lemon juice
– 2 tablespoons sesame oil
– 1/3 cup chopped fresh cilantro
– 3/4 cup chopped pecans

    Bring the Quinoa to boil in water with the salt in the saucepan. Then let it simmer for twenty minutes over low heat. Clear it off into a large bowl and let it cool for another twenty minutes. Scrape the sides of the saucepan

    Add in the green onions, celery, raisins, cayenne pepper, vegetable oil, vinegar, lemon juice, and sesame oil. The sesame oil gives a nutty flavor. Stir well so that the flavor meld into each other nicely.

    Keep the Quinoa at room temperature for around an hour so that it settles down and all the flavors mix well. Just before serving add in the Cilantro and pecans. A salad that is definitely going to win you the best hostess award.
