Utensils needed: frying pan, food processor or hand mixture, bowl, four small salad bowls
Ingredients:
– 400 g (14 oz) canned chopped tomatoes
– 75 g (2¾ oz) cucumber, roughly chopped
– 1 red pepper, roughly chopped
– 1 spring onion, roughly chopped
– 2 tablespoons sherry vinegar
– 75 g (2¾ oz) watercress leaves, finely chopped
– Salt and black pepper
– 2 sachets powdered gelatin
– Olive oil for greasing
To garnish:
– a few sprigs of watercress

Mash the tomatoes, cucumber, pepper, spring onion and vinegar. You can use a food processor for efficiency or a handheld mixer. When you are doing with the puree, transfer the mixture into one large bowl.

Add in the watercress to the tomato mixture. Do not crush it or the salad will become sloppy. Stir well so that the flavors blend well.

Prepare the Gelatin in a cup. Take three tablespoons of water in a cup and sprinkle gelatin powder over it. Leave it for five minutes or until it becomes spongy. Stand this cup over simmering water until the solution becomes runny. Stir it into the tomato mixture slowly.

Grease four salad bowls and spoon out the mixture in to them. Chill for an hour and serve chilled. Garnish with watercress sprigs and serve with brown bread.
