Rocket Salad with Cannellini Beans Recipe

The Rocket Salad with Cannellini Beans is a very simple, light and luscious warm dish that can be dished up as a side dish or a light lunch or dinner. The nicely grilled ingredients of the salad are capable of satisfying your taste buds. The Cannellini Beans look amazing on the bed of fresh rocket leaves.

Ingredients:

– 2 tablespoons olive oil
– 2 cloves garlic – properly minced
– 1 tin (about 400g) finely chopped tomatoes
– 3 tablespoons white wine
– 1 teaspoon dried sage
– 1 teaspoon dried thyme
– 1 tin  (about 400g) cannellini beans –  drained and rinsed
– 2 tablespoons chopped fresh basil
– Salt and pepper to taste
– 60g rocket
– 25g shaved cheese (Parmesan cheese  is preferred) – optional

    Take a large frying pan and pour in 2 tablespoons of olive oil. Set the pan over the stove and set its heat to medium range. Wait until the olive oil is warm and add in 2 properly minced garlic cloves and fry them for around 1 minute.

    Once the garlic is tender, add in the finely chopped tomatoes, 3 tablespoons of white wine, 1 teaspoon of dried sage and 1 teaspoon of dried thyme. Now, increase the heat of your stove to medium-high range and let the mixture simmer for the next 2 to 3 minutes.

    Stir in the 400g of properly drained and rinsed cannellini beans. Top the mixture with 2 tablespoons of chopped fresh basil and season with some salt and ground pepper to taste.

    Now, continue cooking for 3 to 4 more minutes or until the cannellini beans are tender.

    In the meantime, take a large serving platter and nicely arrange the rocket leave on it.

    Remove the bean mixture from stove and spoon it over the rocket leaves on the platter.

    Sprinkle the 25g of shaved cheese all over the salad and serve warm.
